I love this author’s books, and always want to make everything! The reality, however, is that many of the recipes contain multiple steps and a trip to the store for that one special ingredient. As much as I read, re-read, and drool over this book, I find that I have yet to feel inspired enough to tackle the process of actually making any of these salads. I do, however, find plenty of inspiration in the individual components of the recipes. For instance, I recently made the Pumpkin Curry Cashew Spread, a component of the Curry Pumpkin Collard Wraps. Rather than make up the wraps(preparing baked tofu, making pickled grapes, toasting walnuts, preparing collard leaves), I simply used it as a chip dip. Delicious!
I would say this is a great book for someone who enjoys reading cookbooks, a creative cook who can pull inspiration from the recipes, or someone who has plenty of time to putter in the kitchen.
